Happy Tuesday everyone! As I try to build more uniformity and get more consistency with my blog posts , it has lead me to want to give my food posts a dedicated day.  From now on, every Tuesday will be Foodsday on Fashion According to the Menu  and I will be posting a new recipe, restaurant review or anything else good related. I figure this will help me be more consistent with getting more food content up because I know you guys want to see more!

On to today’s recipe. This Super Green Smoothie Bowl with Matcha has seriously been my breakfast for the last 4 days. I keep making it because it is so quick and easy and very very nutritious and filling. With the Matcha, you also get a little caffeine boost that gets you going in the morning. Now this “smoothie bowl” can actually be made into an amazing regular smoothie if you omit the oats. Try it either way and let me know how you think.

Ingredients 

  • 1/2 cup old-fashion oats
  • 2 tsp chia seed
  • 1 cup almond mild or coconut milk (I used Almond)
  • 1/2 ripe avocado
  • 1 cup frozen mango cubes
  • 1 cup baby spinach
  • 1 tbsp unsweetened almond butter
  • 1/2 tsp Matcha (green tea powder)
  • Coconut flakes, granola and strawberries for serving

 

Directions

Soak oats and Chia seeds in Almond milk in a small bowl for at least 10 min (and up to overnight). Transfer the oat meal/chia seed mixture to a blender and add avocado, mango, almond butter, spinach and matcha. Puree until smooth. Divide the mixture into two bowl and top with granola, coconut flakes and strawberries and serve.
