Chipotle Caesar Tuna Salad Wrap

 

It’s summer time, and I don’t know about you but my meals tend to be on the light side during the summer months. Not only because I’m trying to watch my figure for bathing suit season but also because when the weather is so hot, you just don’t really feel like eating heavier meals. This Chipotle Caesar Tuna salad wrap is the perfect light yet filling meal. The flavor is so yummy and its so quick and easy to make, this wrap will make a great lunch or a fuss free dinner.

Ingredients

4 Wheat tortilla wraps
1/4 cup red onion
1/4 cup chopped fresh parsley leaves
1/4 cup Chipotle Caesar dressing (or regular caesar dressing with Chipotle seasoning added)
6 cups mixed green (I used spinach and baby kale)
2 (6 oz) cans chunk light tuna in water, drained well
Freshly ground black pepper
1/2 cup  shredded Mozzarella cheese

Directions

In a medium bowl combine the tuna, parsley, onion, black pepper and dressing.

Place some greens on to each tortilla. Top with tuna salad and a bit of mozzarella. Roll up and serve.

 

Simple and delicious recipe that can be customized to fit your taste. Next time I want to try it with some tomato slices and maybe try chicken breast. The combinations are endless. Let me know if you try this recipe and how you customize it.
