Rosemary and Orange Chicken

I love a good meal that is super quick and easy to make but packs a big punch in the flavor department. Rosemary is one of those spices that just elevates any dish it’s in and in this dish, it pairs so beautifully with the orange.

This Rosemary and Orange chicken has been a go-to in my house for the past couple of weeks, because it’s simple to make and doesn’t take much time out of my busy schedule to make. Another great benefit to this chicken is that I can make it ahead of time or put it in my meal preps, and have a delicious and satisfying, healthy lunch. I usually pair my chicken with sweet potatoes, because the sweetness of them pair so beautifully with this chicken, but I’m sure it would go beautifully with lots of other sides.

Rosemary and Orange Chicken

Ingredients:

4 skinless boneless chicken breast

1 tbsp. black pepper + more to taste

2 tbsp. Orange Zest

1 tbsp. Olive Oil

2 tbsp. minced fresh Rosemary

2 tsp Cayenne Pepper (optional but highly recommended. It really doesn’t add too much heat)

1 tbsp. Honey

Directions:

  1. Preheat oven to 350 degrees
  2. Place chicken in a bowl and mix in all ingredients
  3. Make sure each chicken breast is evenly coated
  4. Place chicken on a baking tray and bake for 30-40 minutes, or when chicken is golden brown
  5. Remove Chicken from the oven and allow it to rest for 5 minutes
  6. Serve chicken sliced, with sweet potatoes or side of your choiceRosemary and Orange Chicken
